Once in the prep room, he first took a large stainless steel bowl, filled it with water, washed the preserved mustard greens to remove the salt, and then soaked it in the bowl. He also added dried mushrooms into the water to soak.

Next, Jiang Yu selected a few large pieces of fresh pork belly from the fridge, which were three parts fat to seven parts lean, and clearly layered. He skinned these pork belly pieces, blanched them, and then diced them into small 1 cm cubes.

After that, he diced the preserved mustard greens, soaked mushrooms, and chopped garlic cloves into small pieces.

Having done these preparations, Jiang Yu moved all the prepared ingredients, the at cubes, mushroom dice, and preserved mustard greens into the main kitchen to start cooking.

He started the pan, heated the oil, and once the oil was hot, Jiang Yu added the garlic pieces to sauté until fragrant. Then he added the at cubes to stir-fry, pouring in cooking wine, light soy sauce, and oyster sauce along the pan’s edge. After adding salt and other seasonings, he successively added the mushroom dice and preserved mustard greens.

Once the ingredients in the pan were evenly stir-fried, Jiang Yu added a moderate amount of sugar for flavor and finally poured in old soy sauce and so water, covered the pan, and let it simr on low heat.

When the water in the pan gradually evaporated, Jiang Yu added a suitable amount of pepper and chicken essence for seasoning, stir-fried evenly until the water was completely dry, and then plated it.

Even before this large pot of preserved mustard greens with at cubes was served, a rich aroma had already filled every corner of the kitchen. Lu Shuwu, Ma Guoqiang, and the others, despite having already had lunch, couldn’t help but swallow at the sll.

Not only them, but even Jia Dequan, who was resting in a small private room outside the kitchen, slled the aroma, rushed in quickly with a perplexed face:

"I’ve honed this nose in the kitchen for decades. If I can’t even distinguish the sll of ingredients, what’s the point of keeping it? Just for breathing?"

He paused, his expression suddenly changed, and even his wrinkles seed to bloom like a flower,

"Xiaojiang, you’ve made such a big pot of preserved mustard greens stir-fried at cubes, you surely won’t use it all, right?

How about we set a little aside to have with dinner?"
