The trotter cooked in the pressure cooker may look intact, but if handled carelessly, it can beco mushy.
However, with the Black Spoon in hand, Chen Mo has no worries. This feeling of being one with the tool makes his operation seamless, and after reducing the sauce with high heat, the color of the trotter in the black pot deepens significantly.
"So, if we want to build a bridge between the trotter at and noodles, we need to find a way to blend the noodle soup into the at. How should we do that?"
The juice is there anyway. To blend in new juice, you have to remove so of the original at juice, which is the simplest principle.

The simplest way to reduce moisture is stir-frying. At four-tenths heat, he adds minced ginger and scallions to the pot. After stir-frying to release fragrance, he adds chopped onion.
There’s no denying that scallions, ginger, and onions are magical; just stir-frying them in hot oil releases quite an alluring aroma, and if pork fat is used for stir-frying, the aroma doubles.
But Chen Mo’s thoughts don’t stop there. Besides scallions, ginger, garlic, and onions, he added chopped mushrooms to the pot. As the condints gradually heat up, the aroma becos noticeably more complex.
"Now with the thoroughly cooked trotter at, back in the pot over low heat to slowly stir-fry, letting it gradually lose moisture!"
While stir-frying, he adds soy sauce and yellow bean paste, turning all the at chunks to a sauce color.
After a round of stir-frying, a noticeable amount of juice appears in the pot, not just the water from inside the trotter, but also the fat that couldn’t be extracted by simring.
One would think there’s no need for more cooking—these at cubes could be scooped out right now and would definitely be a top-tier delicacy!
Cautiously, Chen Mo transfers all the trotter cubes into a bowl, and finally, there’s the imagined bridge!
He pours the Japanese dashi brought from Granny’s house into the bowl to just cover the at cubes, then places the bowl on the induction cooker set to a 60-degree warming state.
"By soaking at low temperature, I hope the Japanese dashi lds smoothly with the moisture-reduced trotter at, saving the trouble of adding dashi to the noodle soup—though it’s uncertain if it will work!"
In fact, Japanese dashi is quite a special broth.
Its biggest feature is its subtle umami, never overpowering the dish, but when it lds with the at cubes, it simply enhances the at’s inherent umami without offering a distinct flavor.
Once the at topping is done, it’s ti to cook the noodles!
At this mont, Granny finally finishes touring Chen Mo’s food truck.
Actually, she finished over twenty minutes ago, but the inside of the food truck was indeed novel; after all, most people may not get the chance to properly see the inside of a food truck in their lifeti.
So Granny couldn’t resist using Chen Mo’s simple equipnt inside the truck to brew a cup of tea for herself, sitting by the window seat, enjoying tea for a whole twenty minutes before reluctantly cleaning the tea set and stepping down.
"Chen Mo, your na is Chen Mo, right?"
Seeing the Chinese characters on the side of the food truck, Granny asks with a smile, "I just brewed a cup of tea in your truck, so I stayed longer, sorry about that."
