The Great Snake Escape Jutsu given by Orochimaru was one of his signature Ninjutsu.
It was a variation of the Substitution Jutsu
It allowed the user to shed an outer layer of skin to escape from an opponent's restraints.
In the battle between Sasuke and Itachi, after being hit by the Amaterasu, Sasuke used the Great Snake Escape Technique to shed his outer skin and successfully evade Itachi's Dōjutsu.
Of course, the Great Snake Escape Technique alone was not enough. The technique had a complentary Ninjutsu called Soft Physique Modification.
