As a top student who could almost instantly learn and perfect any spell and then innovate, Dorothy herself didn't even know how many spells she had mastered. Unfortunately, it seed that knowing all these spells was of little use.
Most witches don't learn too many spells. They only choose a few they like, which are also powerful, to form a series for offense, defense, escape, healing, etc. They specialize in the few spells they choose, and they don't delve too deeply into others, no matter how good they are, until they reach a certain level.
There's no helping it, human energy is limited. "A bird in the hand is worth two in the bush." Focus is necessary to reach the pinnacle.
