Back in the Qins’ village in H Province, Qin Xue asked her grandparents to watch the children while she washed several sweet potatoes and started steaming them to prepare for making shrimp pancakes.
Chu Molin was grinding rice flour, and Qin Jiale, following Qin Xue’s instructions, washed the whelks, added a bit of salt to them to make them purge the sand from their stomachs. Ideally, they would use sesa oil, but they were out of it, so they used salt.
“Sis, why are you steaming sweet potatoes?” Qin Jiale had never seen anyone making shrimp pancakes and didn’t know what her sister was using the sweet potatoes for.
“Didn’t you say you wanted to eat shrimp pancakes?” Qin Xue replied as she stoked the fire.
“Yes, but what does it have to do with your steaming sweet potatoes?” Qin Jiale looked at her sister, puzzled about why she was doing things differently from others.
“Rice alone would make the shrimp pancake too chewy and hard to bite. But adding sweet potatoes would give it a softer touch, just like how yeast works in dough, understand? That way, the pancakes will be soft and fragrant. Also, do we have lettuce at ho?” Qin Xue asked. Shrimp pancakes couldn’t be made without lettuce. You would dip the hot shrimp pancake into chili salt, wrap it in lettuce, and then take a bite. That was the perfect way to enjoy them.
“Yes, we do. Do you want so?” Qin Jiale asked her sister.
